Meet our Head Chef Aurélien Girault
Head Chef Aurélien Girault has been making waves in our lovely harbourside restaurant Bayly’s Bistro since late 2022, so we thought it was about time we got into some proper introductions!
Aurélien grew up on a farm in North-East France with a family-run restaurant offering unique dining experiences with a focus on local ingredients and produce. Watching his parent’s dedication to the preparation of meals literally from paddock to plate, Aurélien developed a deep passion for organic wholefoods.
Following in his parent’s footsteps, Aurélien’s career took off with his first professional cooking experience at the renowned Louis XV *** Michelin restaurant in France, where he was mentored under celebrity chef Alain Ducasse.
After this, Aurélien held various chef positions within a variety of high-end restaurants for leading hospitality groups, both in France and Luxembourg (Gaïchel** and Fredrici*) and Australia, working as a Sous and Head-Chef (Solotel, AppleJack, Merivale, Employees Only) and a Chef Consultant over the past ten years.
“Iʼm so glad to have joined Bayly’s Bistro and the Kirribilli community, and I think the people here are so inspiring.” – Aurélien Girault
“Subtle flavours which allow the diner to register the flavour on the palate – instead of sauces drowning and confusing our taste buds – really are a feature of the Bayly’s menu… With an eye on using the freshest ingredients, Aurélien will change his menu every few months to take advantage of seasonal produce. Bon appetit!” A delicious review of Bayly’s Bistro in Northshore Living Magazine.
We are delighted to have Aurélien on the Bayly’s team brining his French flair to Kirribilli! Check out the current menu and book your table today.
